If you allow lettuce to grow freely, it blooms. Okay, I suppose this makes sense—how else would Lactuca sativa reproduce? They’re nice flowers: delicate, yellow, with dandelionlike poofs. At this stage, you’ll want to avoid eating the leaves, unless you like bitter. And most people here don’t like bitter. But I like these leaves because I grew these plants. I watered them. Otherwise they wouldn’t have bloomed or poofed, and the leaves wouldn’t be bitter.
